Makes 4 trays
10 cups chopped cashews
10 cups sesame seeds
10 cups coconut
10 cups sultanas
10 cups raisins
10 cups sunflower seeds
10 cups pumpkin seeds
4 cups honey
800 gm butter
4 cups brown sugar
Toast cashews, coconut, sesame seeds, sunflower seeds and pumpkin seeds. When cool add sultanas and raisins.
Heat butter, honey and brown sugar until it forms a soft ball in cold water.
Add in dry ingredients and press into trays.
1 cup hazelnuts
1 cup cashews
1 cup dates
1/4 cup desiccated coconut
Water (if necessary)
Method
Literally place all ingredients into a food processor and blend on high until well mixed.
You will know when the mixture is ready as it will suddenly form a ball of dough.
If the mixture appears to be dry and won't form a ball, add 1 tablespoon of water and blend again.
Roll into small balls and keep refrigerated.
*Please note, these particular bliss balls were quite sticky so try not to add too much extra water. If yours are also quite sticky, you could roll them in extra coconut, nuts or cacao powder.
**Two small balls are a perfect snack portion.
